"Soup of the Day"...just got serious!
This means an extra day of weekend people. I know. The days are all running into one another. But I said this last weekend and I will say it again: Make. Your. Weekend. A. Weekend. Completely clean up your home office and shut it down. Don’t you dare treat Monday as a way to get caught up on work or home schooling for your kids.
Provincial Parks and walking trails are open everywhere. Take a drive and rediscover nature in and around Toronto. I’ve been mountain biking with the kids, and the very nature of the activity ensures perfect social distancing.
Social Distancing. There’s that word again. Designed – rightly so – to protect us and our loved ones from the virus. But, sadly, makes us all far more vulnerable to stress, loneliness, feelings of helplessness, and anger. The best antidote is changing pace, getting outside, playing, laughing, connecting, and giving yourself a break. You need it. You’re worth it.

Trainer Moves of the Day

Bite of the Day
I love making Risotto on a weekend night. Spoon in one hand, glass of wine in the other. My favourite these days is making a classic, simple risotto on the stove top and then topping it with pan roasted Brussels Sprouts and Wild Leeks. I like my sprouts firm and charred. If you prefer them softer, increase roasting time accordingly.
Preheat the oven to 450F “convection roast or bake”. Cut the sprouts in half and toss them in olive oil and kosher salt. Arrange them face down on a parchment lined baking sheets, letting the loose leaves flop around wherever. They will get nice and crispy. 15 minutes before the risotto is done, I put the sprouts in the oven. After 12 minutes, I throw the wild leeks on top of the sprouts – whole, tossed on olive oil and salt – and turn on the broiler for 3 - 4 minutes. The leek leaves get nicely charred and smoky in flavour.

Serve the risotto in the centre of a plate and layer on the vegetables. Garnish with more fresh parmesan cheese, a little fresh basil and either hot pepper flakes or fresh ground black pepper.
